Emily's Bean Enchilada's
Tonight Jordan wanted his favorite Enchilada's. I made extra so he could have leftovers tomorrow! These are so easy! Emily's Bean Enchilada's
2 cans of refried beans
2 cans of mild enchilada sauce
10 -12 large flour tortilla's
3 - 4 cups of Fiesta Blend shredded cheese
Mix in a large bowl the beans, 1/2 to 3/4 of the cheese and about 1 cups of the sauce. Warm the tortilla's and then fill them with the filling. Wrap them up and place them in a PAM sprayed 9 x 13 baking dish. Pour the leftover sauce over them and top with leftover cheese. Bake at 375 for 20 minutes.
