Chicken Enchildada's With Sour Cream
Tonight I tried another new recipe called Chicken Enchilada's. It turned out and tasted so good!
Chicken Enchilada's With Sour Cream
1/2 c. chopped onion
1/2 c chopped green pepper
2 T butter
2 c. chopped cooked chicken ( I buy a rotissurre sp?)
1 small can of chopped green chilis
1/4 c. flour
3/4 tsp salt
1 tsp ground Coriander
2 1/2 c. chicken broth
1 c sour cream
1 1/2 cups of Monterey Jack (I used the Fiesta Blend)
12 - 6 inch flour tortillas
3 T butter
Cook onions and green peppers in 2 T of butter until tender. Combine in bowl with the chicken and green chilis and set aside. Melt 3 T butter in skillet. Add flour, salt and coriander. Slowly add chicken broth stirring constantly and cook over medium high heat until mixture boils. Remove from heat and stir in the sour cream and half the cheese (I made a boo boo and added all the cheese but it ended up still tasting great!) Stir 1/2 cup sauce into chicken mixture. (I might of used a bit more than a 1/2 cup. ) Dip each tortilla into remaining sauce to soften. Fill each tortilla with 1/4 cup chicken mixture. Roll up tortilla and place in a 9 x 13 pan that has been sprayed with PAM. Pour remaining sauce over tortilla's and top with remaining cheese. (I had to add some extra cheese since I used it all in the sauce) Bake uncovered for 350 degrees for 25 minutes.

We also had chips and salsa.
Some fruit salad I put together.
For dessert we had homemade chocolate chip cookies!

That sounds great and is a little different from a recipe I have...we'll have to try it out soon. The fruit salad looks so good!!

Denise, it was so good. I also make enchilada's a different way but we really enjoyed this different twist on the recipe
