Lemon Chicken and Pasta

Tonight I tried another new recipe. I have to admit upfront it wasn't bad but it wasn't one of my favorites. It seems like something was missing. Maybe I need to raise the spice amounts. Anyways, on a scale from 1- 10 I would give it a "7". UPDATE: I warmed up the leftovers the next day and this time cut the chicken into bite size pieces. Before I warmed it up I add some Greek Salad Dressing. I have to say .. . I now love this and I am raising it back up to a "9".

Lemon Chicken and Pasta

9 oz Fresh Linguine uncooked
4 boneless skinless chicken breasts
2 cups chicken broth
1 small red or yellow pepper chopped
1/2 Thyme
Salt and Pepper to taste
1 Lemon
1 1/2 tsp Paprika
Make sure you purchase fresh pasta not dried!

I cooked this in my 6 qt Nesco Roaster Oven but you could do this in the regular oven. Preheat oven to 350 degrees.
Spray pan with PAM. Arrange linguine and then chicken in Cookwell or pan. Pour chicken broth over both. Sprinkle on chopped peppers, thyme salt and pepper, Squueze lemon juice over the chicken; sprinkle on paprika.
Cover and roast 45 minutes. If pasta begins to dry out add more chicken broth. This happened to me so I did just that. I am still trying to figure out how to make this better. If anyone tries this please let me know what you think :-)
