Meaty Macaroni Bake
Today I volunteered in Sierra's class all day. Her teacher had a whole bunch of things for me to do. I was able to finish everything except one thing and that I will try to finish tomorrow if I make it in there again.
I left the school around 2:30 because I needed to run to the grocery before the kids got out of school. I wanted to try a new recipe tonight and I didn't have all the ingredients. The recipe is called:
Meaty Macaroni Bake
2 lbs of ground beef or chuck
1/2 c chopped onion ( I used dried onion flakes because my kids don't like to taste the onions)
1 and 1/2 jars of spicy spaghetti sauce (I used one spicy and a half jar of regular)
1 8 oz can of mushroom pieces (I eliminated them because I am the only one who LOVES them)
1 16 oz box of elbow macaroni
2 c sour cream
1 8 oz package of sliced Provolone cheese (I accidentally grabbed the smoked Provolone but it ended up giving it great flavor!)
1 8oz package of shredded mozzarella cheese
Preheat the oven to 350 degrees. Saute onion until cooked through. Add ground beef and cook until brown and crumbly;drain fat. Stir in spaghetti sauce and mushrooms into sauce. Simmer covered for 5 minutes. Cook pasta according to package directions.
Get a 9 x 13 pan and spray with PAM. Layer half the pasta, then half the sauce and then half the sour cream in baking dish. Layer half the sliced Provolone over top. Continue with another layer of everything. Top with Mozzarella. Cover with foil and bake for 25 minutes
I didn't have time to bake my own bread tonight so I had to depend on the bakery! It actually wasn't bad at all :-)
It was really good but if you don't like things really cheesy then I would cut back on the Mozzarlla cheese . . .maybe use 1/2 or 1/3 of what it called for. We like things cheesy so it was perfect!
This picture doesn't make it look all the appetizing but it was really really good! On a sidenote, that salad is Sierra's. I like many more vegetables in my salad . .tomatoes, cucumbers, carrots, avocado's . . the list goes on.
We are taking a night off from working out because Lisa has praise and worship practice. I am kind of glad because I am sore. We worked out hard Monday - Wednesday nights. I think my body needed a rest!

Thought you all would like a Jeter update. He is doing good. He stopped meowing so much. It was 24/7 for the first few days after we got him. Now, he meows just every once in awhile. He is very sweet and he has grown on us all . . .even the ones who are allergic to him.

What a cute kitten! We have begun letting our 4 yo bring one of his favorite kittens onto the back porch and he'll play with him for a VERY LONG TIME! That'll come in handy when we start school next week.
How old are the kittens? Also, I loved finding things for the younger ones to do while we schooled . .it helped a lot!

Your Macaroni Bake sounds a lot like my Husband's Delight--and it doesn't photograph well either.
