Broccoli Quiche

Tonight I tried something new . . .it is called Broccoli Quiche. I had left over fresh broccoli and I ran across this recipe an thought it sounded good.

Broccoli Quiche

1 to 1 1/2 pounds of Fresh Broccoli
2/3 c chopped onion
4 eggs
1 1/4 c skim milk
1 tsp salt
1/8 tsp nutmeg
dash of pepper
1 T parsley
2/3 c shredded Swiss cheese (you can really use anything you have)
1/3 c Parmesean Cheese

Preheat the oven to 350 degrees. Cook broccoli and onion. (I used my steamer to steam the broccoli and the onion I sauted in a small saucepan. In a bowl combine eggs, milk, salt, pepper, nutmeg, parsely and Swiss cheese. Stir in broccoli and onions. Pour into a butter or sprayed with Pam pie plate (I love the Pampered Chef pie plate the best) Bake for 35 minutes. Let cool 5 minutes before serving.
I served a salad with this and bread and butter. It was an easy light dinner that just hit the spot.

Not much happenings today. I wokeup and cleanout, decluttered and organized Sierra's room. I just need to deepclean it next . .I am not sure if I am first going to declutter and organize everything and then deep clean OR just do it all at once. I also cleaned out one drawer in our dresser.

After dinner tonight I went to the gym with Ken and Lisa. We worked out really good tonight . .45 minutes of Cardio and then we hit the machines for another 20 minutes. Then we went to Publix . . .we both ended up getting roasts to cook in our crockpots this week. I haven't had a pot roast since last winter . . .it sounds good!

Oh, Lisa and I are no longer cleaning the church and offices so now my Tuesdays are FREE. What to do? What to do ??

It'll be nice to have the extra time now that you aren't cleaning! The recipes sounds yummy.

Was the quiche too broccoli-y tasting? My family adores quiche but they aren't crazy about veggies mixed in. They pretty much like their green stuff on the side. Sigh.

Cindy - it is so strange for me to be home on a Tuesday . . .I am sitting here trying to decide what to do . . I guess I will continue with my decluttering and reorganizing ;-)
By the way, I had the rest of the broccoli quiche for breakfast :-)

Kathy - The quiche was kind of broccoli-tasting . . probably because it was the main ingredient along with the eggs. I am not too sure you family would go for it . . .because there was broccoli in every bite :-)

Yum, I love quiche! My husband and sons do not. LOL Luckily, my daughter has now discovered she likes it too, so I have somebody to share it with.

Thanks Dorothy! WE have been traveling so much this summer that my kitchen didn't get used much. I love to cook and bake and I am enjoying the whole process again . .plus I got very tired of eating out . . I missed my food! LOL!

Robin - my kids can take it or leave it. I use to only make things that kids adored but I got pretty bored with that. Now, I try all kinds of things and I am surprised how good they are about trying new ideas for dinner.
