Rachel Ray's Minestra Soup and Grilled Salmon with Dill Sauce

Tonight for dinner I tried 2 new recipes. Both of these recipes were so good and were very easy to prepare! The first one is called:

Grilled Salmon with Dill Sauce
1/2 cup non fat mayo (I used regular)
1/2 cup non fat plain yogurt
4 green onions sliced
1 lemon juiced
2 T fresh dill chopped (I used 1 T dried dill)
2 to 2 1/2 pounds of salmon filet
1 large bag of mixed salad greens
1 bag baby spinach leaves

Preheat outdoor or indoor grill. (I used my George Foreman with removable plates). In a small bowl combine the mayo, yogurt, green onions, lemon juice and dill. Place salmon on grill and cook for 3 to 4 minutes on each side or until salmon is cooked to your liking (I always spray the grill or grill plates with PAM before grilling fish. ) Also, if using the George Foreman . . . cook for 8 minutes total. Arrange mixed greens and baby spinach leaves on each dinner plate; top with one salmon fillet and then dill sauce.

I then prepared:
Rachel Ray's Minestra Soup
6 strips of bacon
1 large bag of spinach
3-4 cloves of garlic minced
3 T olive oil
salt and pepper to taste
3 pinches of nutmeg
2 cans cannellini beans, drained
1 box of chicken broth
Grated fresh parmesan cheese

Cook bacon until crisp, then add garlic and oil. Add spinach and cook until wilted. Season with salt, pepper and nutmeg. Add beans and broth. Simmer 15 minutes. Sprinkle cheese into each individual bowl.


After dinner Carlos and I enjoyed having some "together time" out on the front porch. It is my favorite time of day. It is a nice time to catch up on the day! Until the phone rings . . . .and then rings again . . . .and again . . . .I then decided he could hold me instead of the phone :-)We sat outside until almost 8 pm. Carlos tucked Sierra in bed and the rest of us gathered in the family room to watch American idol. I looked over at Jordan and he looked so serious . . .I think he was tired .. he has been working hard!
I finally got a smile out of him!!!


American Idol as GREAT tonight. I am nervous for tomorrow night because 2 of the singers will be kicked off. Also, I have to admit I am a huge Bon Jovi fan. Well, my husband is patiently waiting for me . . .so I better sign off for tonight!

I don't particularly care for salmon, but the soup recipe sounds YUMMY!

Oh, that looks FABULOUS!! Trevor's the only one who will eat salmon with me . . . but I want to keep this recipe. Who knows when I'll get to use it, but YUM to the salmon and soup!

Cindy - before I married Carlos I didn't care for salmon either but after preparing it for 20 years LOL - it has grown on me. He LOVES any kind of fish.

Kristine - it's hard to believe but 6 out 7 us LOVE fish .. .Alexia is the only one that decided to have ceral last night. Also, I love Bon Jovi too!
