Molly and Easy Quesadillas

We had poodles growing up and I never once remember taking them to the vet to get their teeth cleaned. So, when we got Molly about 5 years ago I never knew about cleaning their teeth. Well, this last year her breath started smeling BAD and I mean BAD. It was so horrible that know one even wanted to hold her. I ended up making an appointment to get her teeth cleaned. I dropped her off yesterday morning and picked her up around 5 pm that night. The vet told me that they ended up having to pull 11 of her teeth . . . I couldn't believe it . . .poor little thing. Here she is on the way home from the vet. Also, her bad breath is now gone . .. it must have been the bad teeth. She goes back in 10 days for a recheck. There were only three of us for dinner last night. Carlos and Jordan were still with Ken up in Missouri, Alexia and Taylor were at friends homes so it was just me, Sierra and Landon. I wanted to make some simple so I tried a new recipe called Quick and Easy Quesadillas.

Quick and Easy Quesadillas
Preheat your George Foreman Grill or a grill pan. Spray the grill with PAM. Then take a tortilla and lightly brush it with Canola oil on ONE side only.
Place the tortilla oil side down on the grill.
Then quickly add your fillings. Here you can get as creative as you want. I ended up buying a rotissurre chicken, diced it up and then put it on the tortilla. I then spooned on some salsa, added shredded Monterey Jack Cheese and salt and pepper to taste. You can add just about anything you want to the filling.

Then take another tortilla and lightly brush on Canola oil to one side. Place it oil side up and then lightly close the grill and cook for 3 minutes.
When finished, take off the grill and place on plate. Cut it into fourths and serve with sour cream, salsa and or guacamole. Enjoy!


After dinner I received a phone call from my sister Michelle and from Della. AFter chatting a while I put Sierra to bed. I was starting to feel a little queasy so I went to sit down and watch American Idol. During the show I started feeling worse. I think I was in bed by 10 o'clock which is so early for me. I feel much better today though.

Well, I am waiting for a phone call from Lisa to see if we are cleaning the church and office building today so I better get some things done around here just in case.

Also, I never thought to make quesadillas on the GF grill. GREAT idea!

Poor puppy... ugh 10 teeth... how will she even be able to eat anything now?

That was my question to the vet . . he said dogs start out with 32 teeth so she has about half of them left. Thankfully, she has been eating great today . . . I feed her IAMS for small dogs . . they are very tiny and easy to chew!
