Their Back and New Recipe- Mediterranean Chicken Casserole
Today after getting my last blessing to school I am came home and had to meet with our builder. I have a few things I want to do to the house so he was coming over to measure so he could give me an estimate. After he left I was getting ready to head up to the office to do some work and I was pleasantly surprised to see my husband walk in the door. I thought his flight was due in tonight. I decided to skip work and stay home and the spend the day with him. He was gone a week preaching up in Oregon and Washington. Jordan was suppose to come back today too but one of the churches asked Jordan to stay through Thursday.
Carlos suggested he unpack and then we go out for lunch! We went to a new restaurant we wanted to try. It was great! We both had different panini sandwiches!
About an hour after we came home my mom and dad arrived back from their trip to Ohio. We had a nice time chatting and catching up with them. Mom and I then decided to head to the grocery because I needed to pickup a few items for dinner. I decided to try a new recipe called:
Mediterranean Chicken Casserole
1 pound of Medium Egg Noodles (I used small shell pasta)
1 14 1/2 ounce chicken broth
1 cup milk
1 tsp salt
1/4 cup cornstarch
2 cups chopped cooked chicken (can also use turkey)
1 14 ounce can artichoke hearts drained and quartered
1 7 1/2 ounce jar roasted red peppers drained and sliced
9 Kalamata olives - pitted and sliced
1/2 cup Mozzarella choose
1/2 cup crumbled feta cheese (optional)
1/2 cup white wine (optional)
1 tsp fresh lemon juice
1/2 tsp pepper
grated parmesan cheese
Prepare noodles according to package directions; drain and set aside. In a large dutch oven or pot stir together the broth, milk, salt and cornstarch until the cornstarch is dissolved. Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in noodles, chicken, artichoke hearts, red peppers, olives, cheeses, wine, lemon juice and pepper.
Heat oven to 350 degrees. Spray a 9 x 13 pan with PAM cooking spray. Spoon noodle mixture into dish. Sprinkle with Parmesan cheese. Bake until bubbling around the edges, about 35 minutes. Let stand 5 minutes before serving.
I served this with an Organic Greens Salad and Rolls

We had "almost" the whole family at the dinner table tonight. Jordan was missing - still in Oregon and Alexia had dance practice!
