Chicken Paprikash

Today I wanted to make dinner with something that I already had in my freezer or pantry. I looked in my freezer and I found a bag of frozen chicken thighs. I went and grabbed a cookbook out of my pantry and found a recipe for Chicken Paprikash. I checked the ingredients and I had everything! Here is the recipe:

Chicken Paprikash
2 (3 pound fryers, cut up and skin removed) I used the bag of frozen thighs and it came out great. I just let it thaw in a big bowl of water for a while and then once it was thawed enough I pulled the skin off.
1/2 cup margarine melted
3/4 c of all purpose flour
1 T salt
1/4 tsp pepper
2 T Paprika
1 cup of water
8 oz sour cream
Preheat oven to 400 degrees. Dip chicken in melted butter. Combine 1/2 cup plus 2T of flour, salt, pepper and paprika. Roll chicken in seasoned flour and place in a single layer baking pan. I used my Pampered Chef 9 x 13 baking dish and lightly sprayed it with PAM. Drizzle remaining butter over chicken. Bake for 1 hour. Remove chicken to platter and cover with foil. Pour pan drippings into a sauce pan and stir in 2 T flour and water. Stir, cooking over medium heat until thickened. Add sour cream and heat thoroughly; DO NOT BOIL! Serve gravy over chicken.
The SauceFor a sidedish I made my brother in law Todd's Famous Fried Potatoes. These are so yummy. I use my electric fry pan. I pour a little oil in the skillet and heat it up. I then cut up a bunch of potatoes and onions in small bite size pieces. Put them in the skillet and the sprinkle on his secret ingredient . . . . Janes Krazy Mixed Up Salt! The Janes is great on veggies and meats.Fry up until tender! Yum-O!

For dessert we had ice cream sundaes again!

I bet you can't WAIT those last few days until your Italy trip!! We have friends who've been there a year (military). They've traveled around quite a bit (her sister's lived there for 12 years, married to an Italian). She sends the most amazing photos of scenery . . . I'm looking forward to seeing your shots too.

Oh Kristine! I am trying not to get stressed. I have so much to do before we fly out on Monday. My parents and grandmother come in this Saturday to take care of the kids. I know this sounds horrible but I won't be excited until we are on the way to the airport! I actually don't like leaving my house for this long :-) I am a homebody!
