Jack Fish
I am still going through my thousands of recipes I have been waiting to try. Tonight I tried one and boy it was so good.
Jack Fish
1 to 2 pounds of cod (I used tilapia)
Salt and Pepper to taste
2 tomatoes chopped
4 tsp green onion chopped
1/2 tsp basil
2 tsp butter
1/2 cup Monterey Jack Cheese (I used the Fiesta Mix because I had it on hand)
Preheat oven to 450 degrees. Place fish in baking dish that has been lightly sprayed with PAM. Sprinkle fish with salt and pepper. In a bowl combine tomatoes, onion and basil. Spoon this mixture over fish.
Dot fish with butter. Bake for 10 to 15 minutes or until fish flakes easily when tested with a fork. (It took me a little over 15 minutes because I was baking 2 pounds of fish) When it has finished cooking pull the pan out of the oven and sprinkle on cheese. Return the pan to the oven just to melt the cheese.

We also had mashed potatoes which I didn't think you would really want to see :-) I also bought all the goodies to make ice cream sundae's but we didn't end up having them tonight maybe tomorrow night!

Robin, I am a "visual learner" . .. I guess it carries over to our food too! Sometimes when I make food that looks "blah" I always think it won't be appetizing even though it is LOL

I have a whole bag of frozen Tilapia in the freezer from Costco, now I know what's for dinner tonight!

It LOOKS yummy, but I don't "do" fish (LOL)... incase you didn't know that check out Ginger's blog whenever she posts a recipe for fish.. it usually comes with a "Cynthia disclaimer" - lol
We love fish so I am always trying to find new ways to prepare it
