Texas Chicken
This morning I had some spare time before heading to the school to volunteer in the library so I pulled out the recipe book to another favorite small appliance of mine . . My 6QT Nesco Roaster Oven. I actually have 3 of these roasters the 6qt, 12 qt and 18 qt. These roasters are wonderful! They are great to use especially in the summer when you don't want your whole kitchen heating up. The big one is great for the holiday's when you make your huge turkey's and ham. Also, cooking for a crowd is so simple and easy with the larger two. I decided to make a recipe called Texas Chicken:
4 boneless skinless chicken breasts
1 package Taco Seasoning
2 green onions thinly sliced
1 small can chopped green chili's (about 1/4 cup)
1 small can sliced black olives (about 1/4 cup)
1 can 16 oz stewed tomatoes
1/2 to 3/4 cup shredded cheddar cheese
Serve with dollaps of Sour Cream
Preheat oven or Nesco to 350 degrees
Lightly spray your cooking dish or the cookwell of the roaster. Arrange chicken in the pans. Sprinkle seasoning mix, onions, chilies, and olives over chicken pieces. Pour stewed tomatoes around meat.
Cook for about 15 minutes and then sprinkle cheese over the top. Cook for another 30 minutes. You can also wait and put the cheese in the last 15 minutes if you want it really cheesy. Serve with dollaps of sour cream.
I served this with rice. It was the first time I have made this and I have to say it was really good!

OH YUM! That looks delicious! I was just looking for some new crockpot recipes for our co-op days which start next week! Thanks for sharing it!
Cindy - this particular recipe I did on my Nesco Roaster Oven - - it like a counter top oven. You could definitely do this recipe in your crockpot. Maybe could on low for 8 hours or high for 4. Check with some other recipes that call for boneless chicken breasts :-)
I have the 18 qt roaster but yours looks like it has an air thing or something that mine doesn't.
My crock pot lid split into many pieces and I'm still trying to decide what to do about replacing it.....I'd forgotten about the smaller Nescos - I could then use it for slow or fast cooking. LOL
My 6 and 12 quart came with the air fan but my 18 did not. My first Nesco was the big one and they had not come out with the air fan until later. I would LOVE to get an 18 qt with the air fan because it would help to brown the meat . .especially when making a turkey. What I do in my case is use the browning sauce and that really helps! I love my Nesco's!!!
Thanks Emily. I don't have a NESCO roaster.. I just have a crockpot. I'll give it a try and see what happens.

we do this in a 6 Qt Nesco w/o air circulator top and it turns out great. The recipe can be tweaked to taste preferences
