This morning I got up a little early to get myself ready. I had a busy day ahead of me. After getting all the kids to school I headed over to Lisa's to pickup my cell phone . . I had left it there last night. I then went back to the middle school because Landon and the whole fifth grade from his school had their orientation program and then tour of the school.
After leaving the middle school I headed to Olive Garden to meet my friend Sherri for lunch.
We only see each other once every few months so I really cherish our lunch get together's. It was so nice to catch up with what has been going on in her life. We both ended up ordering the soup, salad and breadsticks . .it was so good!
During our lunch I received a phone call from my friend Sandra who I had lost contact with for about 5 years. She called me out of the blue . .I was so excited to hear her voice . . we had just received our food so I asked if she could call me back after lunch. After I hung up I ended up getting all teary eyed. I was so excited that she called me!
After saying goodbye to Sherri, I headed over to ROSS. I love that store along with TJ Maxx and Marshall's. I found a couple things for the house and a couple things for Alexia's birthday.
Next stop, the grocery! I needed to pickup a few items for tonight's dinner. I am trying a new recipe - Grilled Tenderloin Sandwiches.
When I got home I put the groceries away. I then made the marinade for the meat . . I needed to let it sit in the marinade for at least 2 hours . Sierra asked if her friend Chandler could come over to swim . .I said sure . . so she and Landon went down the street to invite her to come over.
While they were swimming I got dinner started.
Grilled Tenderloin Sandwiches
2 pork tenderloins
(marinade - Italian dressing through 1 tsp black pepper)
1 cup Italian Dressing (I ended up using one dry packet of Italian Salad Dressing and then made the dressing per directions)
1 1/2 tsp Italian seasoning
1 tsp black pepper
2 T olive or vegetable oil
1 large yellow onion sliced
1 large green pepper julienned
1 large red pepper julienned
1 clove garlic minced
1 tsp Italian seasoning
salt and pepper to taste
1/2 lb sliced or shredded provolone cheese
Hamburger buns or any other type of bread
Take the pork tenderloins out of the package. Ours came with 2 in one package. I then cut each one into four pieces . . so that gave me a total of 8 pieces. Then take a piece of plastic wrap and place the meat on top of it. Take another piece and put on top of the meat. Then pound the meat until it meaures 1/4 to 1/2 inch thin. I then put together the marinade (see above) I took a gallon size ziploc and put in the tenderloin . . .I then poured the marinade into the bag. Then set it in the refrigerator to marinade 2 to 6 hours.
Preheat the outdoor or indoor grill. I used my Geore Foreman so I always spray with PAM after it preheats. Menawhile heat the oil in a large saute pan and add onions. Cook for 2 minutes over medium heat and then add garlic. Cook for a minute or so and then add peppers and seasonings. Cook and stir over medium high heat until vegetables are almost cooked.
Grill pork for about 5 minutes. I cooked about 8 minutes on the George Foreman. When meat is done leave on the grill . . .top with the peppers, onions and cheese. Allow cheese to melt briefly and serve on buns.
These were sooooooooooooooo good! I mean we were ooooooohing and ahhhhhhhing all through dinner.
This is not the great picture. I actually meant to take a picture with everything on the grill before I started pulling everything off. By the time I remembered I had already made 5 sandwiches.
Tonight after dinner, Carlos and I were sitting around talking when my cell phone rang. It was my friend Sandra calling me back. We just got off the phone . . I thinked we talked over an hour. It was so good to hear her voice. Sandra, if you are reading this . .. thank you so much for getting in contact with me . . . love you!!!!!!

It was a great day! It is so hot here that swimming is the only thing the kids can do outside. It feels like a sauna when you walk out the door . . it think it was 95 today!

That dinner looks YUMMY! Fun to hear from long lost friends. Oh.. and Ross & T.J. Maxx are two of my favorite stores as well. Guess we better add that to our list. In fact, I always check those 2 stores for anything I need before I head to the mall....

The sandwiches look great. We'll have to try them. We love our George Foreman as well.
I don't hardly ever use my Foreman grill these days. I don't have a very big one so it doesn't really serve the whole family very well. I never think of it. These sandwiches look so yummy!
Do you swim with the kids, Emily, or is the pool more something the younger set usually enjoys?
I'm with De'Etta - lovely dream! Although it's so cool and grey in WA most of the time - not sure a pool is really practical. ha!
