Spring Fun and "Fakeout" Chicken Pot Pie

This afternoon our neighbor Braxton came down to play with Sierra. They decided to go swimming! The weather is still gorgeous - sunny and 82 today.



Tonight Carlos stayed at the office late so I decided to try another casserole. Usually I test them on the kids first before I make if for Carlos. I went through my "to try" recipes and found this recipe:

"Fakeout" Chicken Pot Pie
1 can cream of chicken soup
1/2 cup sour cream
1 1/4 cups milk
3 cups diced cooked chicken
1 16 oz. pkg of frozen mixed vegetables
1/2 tsp salt
1/4 tsp pepper
3/4 cup Bisquick
1/4 cornmeal
1 egg
2 cups shredded Cheddar cheese

Preheat over to 375. In a bowl combine soup, sour cream and ONLY 1/2 cup of the milk. Mix well. Add chicken, veggies, salt and pepper. Mix well. Pour into a PAM sprayed 9 x 13 pan.

In a bowl, combine baking mix, cornmeal, egg and remaining 3/4 cup milk. Mix well. Spread over the chicken mixture. Sprinkle with cheddar cheese and bake 35 minutes.

My kids love those Bisquick recipes. Looks yummy! They are big fans of the cheeseburger pie recipe. :)

I am trying hard not to covet your warm days, sunshine and pool!!! Trying, not always succeeding. Ha! We did get some sunshine here but it will be a long time until anyone is ready to get into a pool. Lol!

Kathy - I grew up with Bisquick. It is still a staple in my house after all these years!
Also, the weather has been incredible. We have had our windows open for the lasts couple months and only had to throw on the air a few times. I wish it would stay just like this all summer but the HEAT and HUMIDITY is just around the corner. I then will be envious of your weather :-)
