What's For Dinner? Presto Romano Chicken

Tonight I tried another new recipe . . .can you tell I get bored making the same things over and over :-) The recipe I cooked tonight is called:

Presto Romano Chicken

Ingredients:
8 oz linguini
2 cans (14 1/2 oz) Diced Tomatoes with Basil, Garlic and Oregano
2 T cornstarch
4 boneless chicken breasts
1 T olive oil

Cook pasta according to package directions, drain and keep warm.
Combine tomatoes and cornstarch, stir to dissolve cornstarch. Season chicken with salt and pepper.
Brown chicken in oil on both sides. Stir in tomato mixture.
Cover and simmer for 15 minutes or until chicken is cooked; stirring occasionally.

Serve chicken and sauce over pasta and sprinkle fresh grated parmesan cheese.

You are so welcome!! I like posting the recipes I tried . . . it's helping me keep track of what I have already tried. I have so many "untried" recipes that I will probably be 90 before I get to them all :-)
