What's for dinner? Baked Salmon
Tonight I tried a new recipe called Salmon Baked in Foil. It was so good!
Baked Salmon in Foil
4 salmon fillets ( I actually use more - see picture)

Salt and pepper
I took my Pampered Chef Bar Pan and covered it with foil. I then put the salmon skin side down. On the top side drizzle it with olive oil and sprinkle with salt and pepper and then squeeze the juice of a half lemon over the fish.
In a bowl put 1 can of diced tomatoes w/basil, oregano and garlic, ,2 Tbsp olive oil, 2 Tbsp lemon juice, 1 tsp oregano, 1 tsp thyme, salt and pepper to taste - (OPTIONAL - 2 cups of shallots - I didn't add it in because I didn't have any and it tasted great without them) Stir together and then spoon it on top of the fish. Cover the fish with foil covering completely. Bake at 400 degrees for 25 minutes.
Another option - you can also make individual foil packets too!
We also had steamed squash!and mashed potatoes and crescent rolls! Can you say - STUFFED?

Hmm, thanks! I have been trying to eat more Salmon and am always looking for new ways to cook it.
This looks so yummy! We are eating leftovers all this week so we don't have anything go bad in the refrigerator while we are gone next week. I can't wait to come back and really start doing some major cooking in my new kitchen.

Emily - glad you are back to posting some recipes. The pictures add a great touch. How do you remember to take them? It seems like so often these days I'm in the middle of life and I forget to pull out my camera and capture it on film. Argh. Frustrating but understandable.
Is that a rice cooker you used for your steamed squash? I think I am going to have to put one on my wish list. Seems SO handy!
Kathy, actually you don't know how many times I forget to take a picture . . .that is why I haven't been posting very many recipes. I actually remember to take a picture after we are halfway done with dinner :-) I try to remember to put my camera in the kitchen as a reminder to take a pictures but it doesn't always work out the way!
The little appliance is actually called a Food Steamer it by SUNBEAM. I love it because it steams vegetables so quickly . . my kids LOVE broccoli and this is a quick way to cook it all the time. Besides vegetables you can also steam rice and even meat. I haven't tried any meat yet but they list beef, chicken, pork and even sausage!
I'm going to have to try your salmon recipe. Not that I would eat it, but I my Babe would love it. He's the only one that eats fish.

A food steamer, hmmmm. Where did you get it? Do you use it with fresh veggies or frozen as well? You know there are always pros and cons with adding another appliance to the kitchen. Ha! I think something like this would be used a lot.
Kathy - actually I was helping a friend declutter her house and she decided to give it away because she never used it . . . so I took it home and I have really enjoyed using it.
