Tortilla Chicken Bake

This morning my mom and dad headed up north to my uncle and aunts 50th Anniversary Party. I decided this morning to go through my thousands of recipes :-) and find something to make for dinner tonight. As I was going through them Lisa called and asked if I could run over to her house for 45 minutes so she could run to the grocery to pickup a few things. Ava was sleeping and Kaitlyn was in school so Christian was the only one who was up and around. I headed over there and started playing with Christian when I received a phone call from Selena's mom - DeAnna. We had a great talk . . .she has a lot of "life choices" to make. She has talked and prayed with Carlos and she is trying to make the right decisions. Please keep her in your continued prayers. :-) After Lisa got back I helped her unload the groceries and then I headed back home to pick up the house and get a few other things done that I needed to do.

Later in the afternoon I went up to my room to put some things away. I have all my windows open and there was a nice breeze going through my room. I decided to lay down for a few minutes . . . the next thing I knew about an hour had gone by and Lisa was calling. Boy, it felt good to get that nice nap.

Alexia came home from school and we decided to clean out her closet. It really wasn't too bad. I ask the kids to go through closets and drawers quite often so they don't get too cluttered.

Sierra and Landon then came home. They had great news . . . they both made the honor roll again! Yea!!!! We then decided to make chocolate chip cookies so we would have them for dessert tonight.

After the cookie dough I got out the recipe I wanted to make and got started.

Tortilla Chicken Bake

2 or 3 boneless skinless chicken breasts sliced in to 2 inch strips
1 can of Italian Diced Tomatoes
1 T chili powder
4 cups Tortilla Chips
1 cup Shredded Cheddar Cheese
sour cream and guacamole

Take the can of tomatoes and drain them. Reserve the juice!!! In a medium fry pan add the reserved tomato juice and 1 T of chili powder. Stir and then bring to a boil . . .cook for 3 minutes stirring occasionally.

Add drained tomatoes and chicken to pan. Cook for 3 more minutes.

Then take a 2 or 3 quart casserole dish and spray with Pam. Then take 2 cups of tortilla chips and layer on the bottom of the dish. Then add HALF of the chicken mixture and then HALF of the cheese. Repeat Layers!Bake at 375 for 15 minutes! When you plate this you can also add a dollop of sour cream and guacamole. Yum!
Serve with a salad and also a bowl of fruit!
I talked to mom and dad and then are more than half way to Cincinnati! My sister Michelle and her family are meeting them there for the big party. Steph and her family couldn't make it because they had already scheduled a cruise during the kids spring break and we couldn't make it because our spring break is not until the April. I wished we could of gone and seen all my cousins and their kids . . . maybe next time. Time to get the kids ready for their baths!
