Quick Goulash And The Rest Of The Day!
I started the day off by decluttering and organizing Sierra and Alexia's room. Usually every spring and autumn I try to go through the whole house. Anyways, by the end of the afternoon I had 2 garbage bags full of outgrown clothes of Sierra's, 3 Rubbermaid containers of toys and a 13 inch TV/VCR (Jordan purchased a new TV and so he gave the girls his old 19 inch. ) I was able to get in a few loads of laundry too! Around 4:30 I ran Alexia up to the church for dance practice. On the way home I stopped at the pantry/thrift store and dropped off all the stuff that I cleared out of the girls room. I love to get rid of stuff right away . .. no sitting around here :-)
I then decided to try a new recipe called Quick Goulash. Here is the recipe:
Quick Goulash
INGREDIENTS:
1 to 2 Tbsp. oil
2 lb. beef sirloin steak, sliced into thin 2 to 3 inch strips
1 onion, chopped
2 green bell pepper, chopped
3 cups water
28 oz. can diced tomatoes, undrained
16 oz. can tomato sauce
2 tsp. sugar
2 Tbsp. paprika
1 tsp. salt
1/2 tsp. pepper
3 cups uncooked rotini pasta
PREPARATION:
In 12" skillet, heat oil and cook steak strips over medium high heat, until browned, about 3-5 minutes. Stir in all remaining ingredients except for pasta. Stir well, then bring to a boil. Add rotini pasta.
Reduce heat to medium and cook, covered, for 10-15 minutes until pasta is tender, stirring frequently. 8 servings
I made a Greek Salad too!
For dessert . . . chocolate chip cookies!
After I got the kids in bed, Lisa called me around 9 pm . . .we had not seen each other for a few days due to her Real Estate School. I went there around 9:30 and arrived to a nice pot of coffee :-) I also brought some cookies with me! It's amazing when we don't talk for a couple days how much we had to catch up on. Ava ended up waking up to eat. After she finished I burped her, changed her and then she ended up falling asleep in my arms as we talked. I ended up leaving around midnight! It's suppose to rain on Friday so I am not sure if we will be riding!

It's so encouraging to see you and Lisa's friendship in this blog. And great that you can drop by more easily now she lives so close.

It's so nice that you have friends close by! NO ONE drops by clear out here without much advance notice (LOL)... and I have to "plan" to stop by any of my in-town friends houses... I say "plan" because I always have kids with me when I go to town and if I go visiting (2-3 times a year) then I plan to not have kids with me for a few hours.
Anyway! It's GREAT that you can drop by spur of the moment like that.
Dorothy and Cindy- we have been having so much fun since she moved right down the street. It has been a blessing to have her so close!
That looks like my kinda meal, even chocolate chip cookies!The goalash looks so pretty and tasty, I'll have to try that soon and just use something else in place of the steak. The rotinia just looks so pretty in there for some reason.
Jodi - I am sure you could just go vegatarian if you wanted to! Maybe you could add an extra veggie in lieu of the meat!
