Casserole Florentine
Tonight I tried a new recipe for dinner. It is called Casserole Florentine. It was pretty good but I would make a few changes the next time I make it. Here is the recipe:
Casserole Florentine
Ingredients:
1 pack Frozen Chopped Spinach, thawed and squeezed dry
1 can Condensed Cream of Mushroom Soup
1 Garlic Clove, minced
1/2 ts Each: Dried Tarragon, Marjoram Salt and Pepper, to taste
4 c Cooked Noodles, or other cooked pasta (I used egg noodles)
1 lb Sweet Italian Sausage, cooked, drained and chopped
1 large Onion, coarsely chopped
1 Egg
1 pack (15-16 oz) Riccota Cheese
1 Tomato, seeded chopped
Fresh Parsley, chopped
Combine spinach, cream of mushroom soup, garlic and seasonings in a small bowl; spread evenly over cooked noodles or other pasta in buttered 3-quart flat casserole.
Distribute chopped sausage over the spinach mixture and sprinkle with chopped onion on top of sausage.
Blend egg into ricotta and spread over all. Bake in a preheated 375-F oven 25 to 30 minutes or until golden, then allow to cool slightly.
Top with garnish of tomato and parsley. Yield: 6 servings
POSSIBLE NEXT TIME CHANGES: When I make this again I might try cooking the onion just for a few minutes before adding it to the casserole. My kids don't care for onion so I think if they were cooked a little bit more they might not notice them as much. Also, I think I will try Ground Italian Sausage next time.
I served this with Fresh Strawberries and Garlic Knots. The Garlic Knots I picked up today when I had lunch with my friend Angela. She donated a whole trailer full of stuff to our church Thrift Store so she followed me to the store today on my way to work. We ended up at my favorite pizza restaurant for lunch while we waited for the guys to unload the trailer.
After dinner Lisa and I walked for about 45 minutes. Now I am home . . .very tired and I think I am going to call it a night!

Interesting recipe. Where did you find it? My family does not agree on spinach. I have two who will eat it up (and I LOVE it) but the rest of the family avoids it like the plague. I'm not sure if they would eat it in a casserole. How did your kiddos do with it? Do they like spinach? I need to try this on my family. They would love the noodles and meat (I would have to saute the onions like you mentioned to soften them up a bit).

Kathy . . . actually none of my kids like spinach . . .I can't figure it out though because when it is in a casserole you really can't taste it. I myself LOVE spinach. They did Ok with it . . .I was very surprised. They had more problems with the onions . . .I really wish I would of sauteed them first . . I think they would of liked it even more. Like you said . . .it was an interesting recipe LOL! Oh! I got the recipe from an online friend and I have no idea where she got it from. I actually have about 1000 recipes I have printed off the computer and I am SLOWLY working through them. One day I took a day and went through them all . .and put them in a binder. Once I try the recipe if we don't like it . .. I trash it and make room for another recipe in the binder. If we like it . .it gets a smiley face and it receives a permanent home in the recipe binder!
