New Breakfast Casserole Recipe from my friend Lil


Hey Emily!

When we were in Phoenix last month one of the ladies made this casserole for one of the brunches and it was really yummy. Since you love to get new recipes I thought you might like this one. Hopefully you don’t already have it. I’m having a ladies breakfast/prayer & worship meeting at our house this Saturday and I’m going to serve this along with mixed greens salad w/champagne vinaigrette, for those watching the waist I’ll also serve French vanilla yogurt with fresh berries and granola along with some bagels or croissants. If you have any other ideas for other side items for a brunch let me know. I’m always looking for new things to try. My friend Marcella sent me the recipe and she’s a character. I usually can’t stop laughing when I’m around her. She’s got the cutest southern accent. So as you read the recipe read it with a real southern draaaaaawwwwwl. Kind of like Paula on the Food Network. Easy Breakfast Casserole – cant’ have too many of these (or can you)

3 lbs. ground sausage - serves 8 to 10
1 dozen eggs - lightly beaten
1 pint of cream
Any type cheese you like, about 3 – 4 cups (a mixture taste the best)
2 cans of Pillsbury crescent rolls

Precook/brown the sausage...after it's cooled....mix in ALL the cheese....(use a LOT)
On wax paper....roll out crescent rolls until they're flat...but keep them together

In a large deep baking dish...(corning ware) line the bottom and sides of the pan with the crescent rolls. (you can press them down a bit to form a thin layer)
Add in the sausage & cheese
Add eggs....
(You can add more eggs if it looks like there's MORE sausage & cheese. Be sure it's not too meaty)
LAST...roll out the second layer of crescent rolls.

This can be refrigerated overnight....Bake 350 for at least 1 hour...(depending on how DEEP it turns out)
If you find you need more time to bake...cover the top with foil in order that the crust doesn't burn.
When it's not shaking like jello in the middle, it's done! BE sure and not overcook!

That sounds YUMMY! Our worship team takes turn bringing breakfast for the pastors and band. I'll have to try this the next time it's my turn to take breakfast.
